Line Cook

Line cook is responsible for cooking all the items on the menu. In addition, they must learn how to prepare our sausage gravy, creamed chipped beef, hollandaise sauce, grits, potato pancakes, potato salad, chicken salad, and tuna salad. Candidates must be able to work in a challenging environment getting quality food out in a timely manner. Shifts begin at 6:00 AM and end after closing duties: cleaning, putting food away after 2:00 PM. Pay is commensurate with skill level ability and speed.

Line Cook/Prepping Station

This position assists the line cook but is also for maintaining the condiment bar. This position cooks bacon, sausage, potatoes, burgers, Philly’s as well as filling all the items in the condiment bar such as sliced and diced tomatoes, diced green peppers, chop bacon and sausage bits, and make sure all items in the condiment bar are filled and remain filled throughout the day. Shifts are 6:00 AM to 2:00 PM and closing duties. Pay is commensurate with skill level, ability, and speed.

Dishwasher/Prep Cook

This position is not your typical dishwasher position but is an integral part of meal preparation. Not only does it include washing dishes, silverware, pots, and pans but it also prepares food for the cooks to use in meal preparation. Duties include cooking potatoes, peeling, and scalloping them for our signature home fries. This person would also prepare all meats: slicing deli meats for sandwiches, slicing steaks, pepping ground beef into portion for burgers, portion corned beef hash. This position also slices and dices onions for use in the condiment bar. Cooking experience is a plus for this position. Shifts are 6:00 AM to 2:00 PM and closing duties. Pay is well above standard dishwashing positions and is also commensurate with skill level, ability, and speed.

Server

Servers must be outgoing, friendly and must be able to work with the public in a pleasant manner. They must learn the menu along with pricing and be able to respond to any questions customers may have. Duties include writing customer orders and delivering those orders to the cooks. As there is no POS system, tickets are written by hand so good handwriting is a plus. Servers also pour drinks and run the food to the table, and in addition bus tables. Servers are also required to ring the customers up at the register. One to two years of experience in a busy environment is required. Servers must demonstrate ability to manage conflict with the public in a calm and professional manner. Shifts are from 6:45 AM to 2:00 pm then closing duties. Servers are paid a server wage but keep their tips except for a tip-out to the Hostess/Server assistant.

Hostess/Server Assistant

In addition to greeting and seating customers this position’s key function is to run the register to ring up customers and to close it out at the end of the day at the end of the day. Other duties also include pouring drinks, running food, bussing tables, and assisting servers in closing duties. Tip-outs from the server will be dependent on how well they perform these latter duties. Shifts are from 7:30 AM to 2:00 PM then closing duty. Pay is $13/hr. plus tip-out from server.
